Honey is heavy. A tablespoon of it weighs about 21 grams, so a gram figure for honey turns into fewer spoonfuls than for almost anything else in the kitchen.

    A 12 oz honey bottle holds 340 g by weight, which is almost exactly 1 cup by volume.

    Why honey needs fewer spoons

    Honey is about 1.44 times as heavy as water for the same volume. Its density in the site’s data set is 340 g per US cup, or 1.437 g per millilitre. So a tablespoon of honey weighs 21.25 g, while a tablespoon of water weighs 14.81 g.

    This is the reason the “15 g is a tablespoon” rule fails for honey. 15 g of honey fills only about 70 percent of a tablespoon. Moisture changes the figure a little: honey with more water is slightly lighter per spoon, and set or crystallised honey traps air.

    The formula

    Tablespoons = grams ÷ 21.25. Teaspoons = grams ÷ 7.08. Grams = tablespoons × 21.25.

    The divisor is the cup weight divided by the 16 tablespoons in a US cup: 340 ÷ 16 = 21.25. USDA FoodData Central lists 21 g per tablespoon and 339 g per cup for honey, so its figures round to the same answer.

    Worked examples

    A tea or yogurt recipe calls for 20 g of honey. 20 ÷ 21.25 = 0.94 tablespoons. One level tablespoon is 1.25 g too much, which you will not taste. To be exact, measure 2 3/4 tsp.

    A granola recipe asks for 85 g of honey. 85 ÷ 21.25 = 4 tablespoons, which is exactly 1/4 cup.

    Counting calories in 2 tablespoons. 2 × 21.25 = 42.5 g. USDA lists 304 kcal per 100 g of honey, so 2 tablespoons carry about 129 kcal. One tablespoon on the USDA weight of 21 g is about 64 kcal.

    Measuring honey without the mess

    Coat the spoon or cup with a few drops of oil first, or measure the oil for the recipe before the honey in the same spoon. The honey then slides out and the whole amount reaches the bowl.

    Better still, put the bowl on a scale, press tare and pour honey until the display reaches the weight. There is nothing to scrape out and no spoon to wash.

    If the honey has crystallised, warm the jar in a bowl of warm water until it is liquid again before measuring. Crystallised honey does not level in a spoon, so a spoonful of it can be well off the figures above.

    Honey or maple syrup?

    Maple syrup is lighter than honey: 312 g per cup, 19.5 g per tablespoon. If a recipe gives grams of honey and you swap in maple syrup by weight, you will use 9 percent more spoonfuls. Choose maple syrup in the converter to see the spoon count for it.

    Where these numbers come from

    The 340 g per cup figure is the honey value in the density set behind the cups to grams converter. USDA FoodData Central (SR Legacy, honey) gives 21 g per tablespoon, 339 g per cup and 304 kcal per 100 g. US labels use 1 tablespoon as the reference serving for honey. NIST defines the US tablespoon as 14.79 ml.
